Fall is here! Time for soup.

One of the perks of living in the Inland Northwest is the changing seasons. This summer my favorite mid-day break was lunch in Mission Park to soak up the sun and vitamin d. Now that fall is here I can enjoy the sunshine, crisp air, and the changing colors of the leaves. I was recently introduced to a lentil soup recipe from Alton Brown that really surprised me with its flavor. Lentils are packed full of fiber, protein, minerals, B-vitamins and they are extremely low–fat. What’s not to love? The secret for this soup turns out to be Simple Truth Organic vegetable broth from Fred Meyer! Store bought vegetable broths are usually not very good, not to mention they are loaded with chemical flavors and sodium. Simple Truth is the best I have tried so far and it really enhanced the simple ingredients of carrots, celery, onion and lentils. Plus, shopping at Fred Meyer allows me to give back to the community! I invested in a food thermos, found my old picnic blanket and now I am ready to spend my lunch break in beautiful Mission Park this fall!
